In 2011, Nat opened Beatrix Bakes, a modest bakery on a sunny nook in North Melbourne. Two upright old-fashioned rotary beaters make up the design, representing the call to arms that baking has been for her as well as the homey happiness of small-batch baking. The name is a play on the suffix –trix, which was historically used to create terms like aviatrix and aviatrix (female avaiator). Nat is a beat(e)rix, a female beater. Beatrix means ‘bearer of gladness’ in Latin. That, simply put, is what cake should do, and it is what she and her crew strive to deliver every day.

Le Bajo Milkbar, hidden in a North Melbourne warehouse, was founded by one of the creators of Bali’s Potato Head Beach Club. Sweets are served in a Japanese way, with a focus on fruit and cream. With fluffy shokupan fruit cream sando, white bread takes on a whole new meaning. Alternatively, go for the multi-layer strawberry shortcake with delicate seasonal fruits on top. The cafe is an odd mix of vintage Australian items, delectable Japanese sandwiches, pastries, and excellent coffee. Chef Chris has tried a variety of jobs, but nothing brought him more joy than baking for friends and family in his leisure time. He knew he wanted to go to culinary school after winning numerous blue medals in baking competitions at the Indiana State Fair. Mister Nice Guy’s Bakeshop, established in 2010, is Melbourne’s first 100% plant-based bakery. Lucas Cook and Deb Kantor, husband and wife baketivists, founded Mister Nice Guy’s Bakeshop. When they were confronted with a variety of dietary intolerances, they realised there was a problem that needed to be addressed. So they set out to find egg-free, dairy-free, gluten-free cake mixes to see what was available, only to discover that there wasn’t much out there for individuals like them. This set off a chain reaction of people baking at home and taking orders, leading to the opening of Melbourne’s first plant-based bakery.
